American Fruit Pizza

I've eaten my fair share of fruit pizzas, but didn't realize how easy it is to make one myself. This recipe was perfect for the July 4th weekend. No leftovers remained for July 5th.


Make the cookie dough, spread on a pizza pan to bake, cool, cover with icing and fruit. Enjoy! It's that simple and tastes incredible.


The recipe inspiration came from my favorite baking blog, Sally's Baking Addiction. Whenever I want to bake something new, I check out her blog first to test our her recipes. In this instance, I wouldn't change anything, except that I didn't believe her when she said to grease the non-stick pizza pan. Pizza doesn't usually stick so I thought a tiny bit of olive oil would do the trick--nope! Definitely listen to her and grease the pan. My pizza cookie stuck to the pan and then cracked in half when I transferred it to the plate to be iced and served. Luckily icing hides all those blemishes, so no one could tell the difference. Yay!


For the fruit, she lists different combinations. My family insisted that I stick to patriotic colors for the July 4th holiday, but I'm eager to try peaches and kiwi next!


This recipe was simple and delicious. I would by lying if I said I only ate one piece; I ate three. So good! That’s it. One plate. One meal. (Dessert counts, right?!)

Cookie Crust (most are pantry staples):

  • Flour

  • Cornstarch

  • Baking powder

  • Salt

  • Unsalted butter

  • Sugar

  • Egg

  • Vanilla extract


Icing:

  • Cream cheese

  • Unsalted butter

  • Confectioner's sugar

  • Vanilla extract


Fruit Combos:

  • Strawberries, blueberries, and blackberries

  • Kiwi and peaches
