Cinnamon Scones

I still remember my first true scone. I was sitting in a cafe in Scotland with my best friend. They served the scone with clotted cream. I still don't quite understand what that is, but it is so dreamy and delicious! Every once in a while, I make scones to be reminded of those travels.


Mix together the ingredients, bake, and enjoy. These are delicious both fresh from the oven and the next day once refrigerated.


The recipe inspiration came from my favorite baking blog, Sally's Baking Addiction. Whenever I want to bake something new, I check out her blog first to test our her recipes.


Let me start by saying I am an avid cinnamon lover. I order French toast whenever I see it on a menu. Sweets > savory. I don't eat much bread, but I do make French toast rather often. This recipe reminded me so closely of French toast, but in a crumbly, biscuit way that wasn't as heavy as French toast. The flavors are very similar, but surprisingly, I preferred this recipe. I also think these scones stand up well on their own. No need for butter or the magical clotted cream. They're moist, but with a nice crust, and very flavorful on their own.


The key to this recipe: cinnamon chips. They taste kind of weird on their own, but they are incredible in this recipe. Trust me!


I made the scones according to directions, except that I would recommend either halving the recipe or splitting the full batch into two round discs, so that once cut, the wedges are smaller. The full recipe cut into eight discs creates very large discs. I prefer smaller ones so that I can snack throughout the day without feeling like I'm eating a giant quantity each time. Three smaller scones are the same nutrition as one bigger one, right?


For the icing, I'm not a big coffee fan, so I substituted heavy cream instead of the coffee, which Sally says we can do. Definitely added a nice sweetness to the scones.


This recipe was simple and delicious. I'm looking forward to trying out different flavor combinations, but for now I'll stock up on cinnamon chips. So good! That’s it. One plate. One meal.









Scones (most are pantry staples):

  • Flour

  • Baking powder

  • Cinnamon

  • Salt

  • Unsalted butter

  • Heavy Cream

  • Brown Sugar

  • Egg

  • Vanilla extract

  • Cinnamon Chips!


Icing:

  • Confectioner's sugar

  • Vanilla extract

  • Heavy Cream (or Coffee)
